I don't think that's it, actually. At my last job, the fine dining one, I worked with some other awesome cooks, and was called upon to create specials and other things--I was given a lot of autonomy after I proved I was a competent and reliable worker omg how much do i hate that i was laid off after the recession hit and then the bp oil spill completely screwed the gulf coast sob sob. So proving myself to myself in that environment gave me a lot of self confidence in my skills, I guess. And it's not like I never had plates sent back for whatever reason, so...idk.
