So, it looks like I won't get the position they were advertising for, but they will probably hire me as a line cook. The pay isn't as good, but it's better than what I make now. And I've already got a possible roommate lined up. So things are getting better.

My hot sauce is becoming very popular! So far I've given away two batches and I've got a third one going now. Thankfully it's very cheap to make, so I just bought a bunch of plastic squeezy bottles (also cheap!) and that's what I'll give out as Christmas presents this year.

an increase in pay and a change of scenery...that is always a good thing.

Speaking of your hot sauce....how long does it keep. We made a batch.

Oh cool! How'd it turn out? I guess it would keep indefinately in the fridge. All the sauce from the first batch is gone already! I put it on almost everything. But since it's mostly vinegar I don't think it will spoil.

it turned out good

he used some habs in his...so quite hot but lovely floweriness as well.
Sadly he figures when he used some on his lunch on Friday that it had "gone off" because he got violently ill.

Huh. I would have thought the vinegar would keep bacteria growth to a minimum. Maybe it was a coincidence? Anyway I keep mine in the fridge just to be on the safe side.

I don't know if I could stand the habaneros! It's hot enough for me just using cayennes and jalapenos!

It

Has been in the fridge so I am surprised it would have gone bad.

He said something about adding tomato paste....not sure if that was when he made it or there was tomato paste added to whatever ever he made on Friday for lunch.

Any thoughts on that?

Well, tomato paste has sugar in it, but it's also acidic. Unless the tomato paste had already spoiled when he added it, I don't think it would have caused any problems. I think he may have picked up a quicky virus from somewhere, and the hot sauce on top of that upset his stomach even more.

It's better pay, that's the main thing. And who knows? There might be room for advancement or something better could come along, you never know.

I want to try it! How hot is it? :)

Lemme put it this way: when I gave a bottle to my sister and brother in law, I wrote Fuckin Hot Sauce on the bottle. This shit is nuclear.

But it doesn't have a lot of flavor. I liked the first batch better; that one I made with mostly cayennes, and this one I made with mostly jalapenos. I want to try it with habaneros. Another friend of mine on lj used some and she said it gave it a nice fruity flavor. So I may use combined cayennes and (deseeded) habaneros next time.
